“Viva la France” [the Tour de France, that is]

Chef Leon's Homage to the Art of French Cooking
Trio is not a French restaurant, nor do we typically serve French fare. However, many of you may not know is that our Executive Chef, Leon Bahlmann, who is also not French but all- American, was trained by the CIA [Culinary Institute of America] where there is a pronounced emphasis on learning classic French cooking. Leon just can’t help but bring that rich tradition to the “Contemporary American” or “American Eclectic” style represented in the Trio menus.
Another all-American chef, Julia Child ,and an author of The Art of French Cooking was totally in love with French cuisine, although she once colorfully described it this way: "The best way to execute French cooking is to get good and loaded and whack the hell out of a chicken. Bon appétit." We asked Leon what he thought of this and he said: “although this technique was not used at the CIA, it certainly sounds like a great approach. She must have been a lot of fun to cook with!”
You may also be unaware that Leon is a bit of an amateur cyclist and he greatly enjoys following the great Tour de France every year, which is about midway through the course this weekend. In any case, this Thursday July 14th is also Bastille Day, and in honor of this celebration AND the Tour De France, it seemed appropriate to ask Leon to whip up some classic French specialties. His comment: "Viva la Tour!"
Hence, on Thursday, Friday & Saturday you might wish to feast upon:
Vichyssoise [chilled potato soup] with Truffled Crouton
Salad Mélanges – fresh greens with Chevre, roasted Beets & Pistachio, Citron Vinaigrette
Pan seared Duck Breast with Merlot & Black Cherry Coulis
Or
Whole Grilled Loup de Mer [Wolf of the Sea, aka Bronzini] with Lemon Saffron Cream
Both entrees are served with roasted Fennel, Watercress, Artichoke Hearts & Haricots Verts
Apple Tart Tatin [for dessert]

“Liquid Abstracts” Exhibit for July & August
Trio is switching up art this time, without switching artists. The vibrantly colored abstract art by Kale Van Leeuwen explores a different dimension of this prolific KC artist. Kale provided some great, fun pieces to specifically coordinate with our 7th Anniversary event in June, and we are extending his run, but with a collection of boldly abstract paintings, free form imagery, dynamically colored.
As an artist, Kale says this about himself in his bio: "Subtlety has never been my strong point. I create work that is vivid, bold and eye-catching. One consistent thread in all of my work is the use of light and reflections. Whether the subject matter is a mannequin, chairs, marbles or a ceramic horse, the lighting is always a key part of the painting. I also have a great desire for color; the brighter the better. I like the vibrancy of the saturated color next to the deep black shades."
Of course, Kale's art is for sale and very moderately priced, ranging from $150 to $700, depending on the size of the work. "Liquid Abstracts" runs from July 9 through August 27th.
